Ingredients

  • 2 1/2 lbs thawed and drained boneless, skinless chicken breasts
  • 1 (14 oz) can diced tomatoes
  • 4 tsp onion powder
  • 2 tsp garlic powder
  • 1 Tbsp tomato paste
  • 3 Tbsp prepared yellow mustard
  • 3 Tbsp apple cider vinegar
  • 3 Tbsp paprika
  • 1 tsp cayenne pepper or to taste (this makes a SPICY BBQ, try 1/4 tsp if can't abide heat)
  • 3-4 tsp mineral salt
  • 1 tsp black pepper
  • 2 tsp liquid smoke
  • 2 tsp blackstrap molasses
  • 1 cup drained pineapple chunks
  • 4 tsp Super Sweet blend, or 4 doonks pure stevia extract

Preparation

Step 1

1. Place the chicken in the crockpot.
2. Place all other ingredients in a blender and process until smooth.
3. Add the sauce to the crockpot and cook on low heat all day or on high heat for 5-6 hours.
4. Once the chicken is cooked, shred it and mix it into the sauce. Let sit in the sauce (to soak up the BBQ sauce) for 10 to 15 minutes, then serve.

It's perfect on sprouted rolls or over brown rice with Light and Lovely Coleslaw (p.231) on the side. Or simply throw some finely cut cabbage in with your sandwich if you want less fuss.
