Ingredients

  • 2 c shredded has browns
  • 3 T butter divided
  • 1 1/4 c shredded zucchini
  • 1/2 c onion
  • 4 eggs
  • 1 c half and half
  • 1 orange bell pepper (seeded and chopped)
  • 1 T Italian parsley
  • 1/4 tsp crushed red pepper
  • 1 c shredded gouda cheese
  • 1 T flour

Step 1

Preheat oven to 400 degrees.

Gently pat hash browns dry and cook 12-14 minutes in 2 T butter turning once. Press hash browns into a pie plate going up the sides. Bake for 10 minutes and remove from the oven. Reduce oven to 325 degrees.

In 1 t butter cook onion and zucchini for 3 minutes or until soft. In bowl combine eggs, half and half, zucchini mixture, bell pepper parsley and crushed pepper. In another bowl combine cheese and flour and add to egg mixture. Pour into the hash brown pie crust.

Bake 40-45 or until knife inserted comes out clean. Let stand for 10 minutes before serving.
