Mama's Famous Meatloaf~THM-S

Ingredients
- Topping:
- 1/2 large onion, chopped
- 3 lbs ground beef (or venison or turkey)
- 3 large eggs
- 2 tsp onion powder
- 3 tsp minced onion
- 2 tsp garlic powder
- 2 1/2 tsp mineral salt
- 3/4 tsp black pepper
- 3 Tbsp prepared yellow mustard
- 6 Tbsp Trim Healthy Ketchup or store bought sugar-free
- 3 Tbsp Trim Healthy Mama Baking Blend (KC: I sub Flax Meal)
- 1/2 cup Trim Healthy Ketchup or store bough sugar-free
- 2 Tbsp prepared yellow mustard (KC: I reduce to 1 Tbsp)
- 2-3 Tbsp Gentle Sweet or 1 Tbsp Super Sweet Blend

Preparation
Step 1
1. Preheat oven to 350 (I bake at 375-400)
2. Make the loaf. Put the onion half in a food processor with 1 heaping cup of the ground meat. Process until the onion is completely broken down and absorbed by the meet (you may have to stop processing and scrape down sides with a spatula, then start again a couple times). **KC: I skip this step & just chop onions finely & add to meatloaf mixture.
3. Put the meat-onion mix in a large bowl and combine with remaining meatloaf ingredients. Put in 9 x 13-inch baking dish. Bake for 45 minutes.
4. Make the topping. Mix the ketchup, mustard and sweet blend; then spread on top of the loaf. Bake for 10 minutes more. Broil for the last few minutes for a browned and bubbly topping.
TRIM HEALTHY KETCHUP:
1 6-oz can Tomato Paste
3/4 cup water
2 Tbsp Apple Cider Vineger (or red wine or white vinegar)
1 tsp Mineral Salt
1/3 tsp Onion Powder
2 tsp Super Sweet Blend, or 2-3 doonks Pure Stevia Extract
Whisk together all ingredients in a small bowl, transfer to a glass jar, cover, keep refrigerated.
