Ingredients
- 1 lb. shrimp, peeled, deveined, tails on
- 2 Tbs. good olive oil
- 2 Tbs. flat-leaf parsley, chopped
- 2 cloves garlic, minced
- Zest and juice of 1 lime
- Kosher salt & freshly cracked black pepper, to taste
- 2 oz. feta cheese, crumbled
- 2 Tbs. fresh mint leaves, chiffonade
- Lime wedges, for garnish

Preparation
Step 1
Preheat grill pan or outdoor grill to high. In large bowl, combine olive oil, parsley, garlic, lime zest, salt and pepper. Toss shrimp to coat thoroughly.
Grill shrimp until pink, opaque and curled in on themselves, about 2 minutes per side.
Remove shrimp to serving platter and spritz with lime juice. Top with feta and sprinkle with mint.
