BREAST****Slow Cooker Chicken with Thai Peanut Sauce

31/08/16 - VVG for both. I served it with some PC udon noodles dressed with sesame oil and seeds and slivered green onions, topped with some chopped coriander, mint, basil and chilies for me. I used a large jalapeno, the Thai red curry paste and a pinch of chipotle chili flakes and it wasn't too hot.

Ingredients

  • 3/4 pound chicken breasts, cut into strips
  • 1/2 cup canned coconut milk
  • 3 tablespoons chunky peanut butter
  • 1-2 cloves garlic, minced
  • 1 1/2 teaspoons minced fresh ginger
  • 1 small jalapeno, minced
  • 2 teaspoons palm sugar
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon lime juice + grated zest
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons fish sauce
  • 2 teaspoons Thai red curry paste
  • 1 teaspoon sesame oil
  • 1/4 to 1/2 teaspoon crushed red pepper flakes (taste after adding curry paste and jalapeno)
  • 1 tablespoon cornstarch
  • 2 tablespoons coconut milk
  • 1 ounce chopped peanuts or cashews, for garnish
  • 3 tablespoons cilantro, chopped, for garnish
  • 2 scallions, thinly sliced, for garnish
  • lime wedges and thinly sliced fresh chili, for garnish
  • Rice, fresh udon noodles, rice noodles, or lettuce leaves, for serving

Preparation

Step 1

Arrange chicken in the bottom of small slow cooker. Stir together remaining ingredients except garnishes until mostly smooth and pour over chicken.
Cover and cook on LOW for 4 hours, or HIGH for 2 hours. Make a slurry with 1 tablespoon cornstarch and 2 tablespoons coconut milk and stir into mixture to thicken sauce, adding a bit of chicken broth if needed for consistency. Reduce slow cooker temperature to warm until ready to serve.
Serve chicken and sauce over cooked white or brown rice, cooked rice noodles, or stuffed inside large lettuce leaves, as wraps. Garnish with chopped peanuts or cashews, fresh cilantro, and additional red pepper flakes or minced fresh chili, if desired.
