Ingredients
- 3 cups carrots, sliced
- 2 tbsp onion, chopped
- 1 cup boiling water
- 1/8 tsp salt
- 2 tbsp frozen orange juice concentrate
- 1 tsp lemon juice
- 2 tbsp vegetable stock (from carrots)

Preparation
Step 1
Add carrots and onion to boiling, salted water. cover and boil gently until carrots are tender about 20 minutes. Drain, save 2 tbsp of the liquid. Add orange juice concentrate, lemon juice and cooking liquid to drained vegetables, stir gently.
Reheat to serving temperature.
