  • 1 quart strawberries
  • 4 cups sugar
  • 1/2 lemon, juiced

Step 1

Wash and dry strawberries and remove all stems and leaves. Put strawberries into a heavy pot, cutting a few of the berries to release some moisture.
Cover the strawberries with the 4 cups of sugar and stir mixture gently over low heat until additional juices are released from the berries.
Then raise the heat to moderate and stoop stirring.
After the mixture is boiling rapidly, cook an additional 15 minutes (17 fi berries are very ripe)
Do not stir. Use a wooden spoon to streak through the bottom to make sure the mixture is not sticking. After the 15 minutes, tilt the pot. You should see the liquid in the bottom of the pan setting. Set the berries off of the heat and allow to cool uncovered. Sprinkle surface of the berries with the juice of 1/2 lemon. When cool, stir the berries lightly and place in hot pint-sized sterile jars, leaving 1/4-inch head space. Adjust caps and process 10 minutes in a boiling water bath.
