- 10 Oz frozen,chopped spinach
- Lg red skinned potatoes (Alot)
- Salt & Pepper
- 1/3 Cup sour cream
- 1/2 Cup white cheddar cheese,shredded
- 1 stick butter,softened
- Sliced cheddar cheese

Step 1
Cook spinach according to package directions,drain well of as much water as you can squeeze out of it (Do not want spinach to be wet or moist). Chop potatoes into pot full of water and boil until tender. Drain potatoes,add spinach,salt,pepper,sour cream,shredded cheddar and butter;beat until smooth. Transfer to an oven safe casserole dish;top with layer of sliced cheddar cheese. bake for 30 minutes in a 350-375 degree oven.
