Ingredients

  • 1 pound tricolor rotini pasta
  • 1-1/2 cups sour cream
  • 1/2 cup honey
  • 6 tablespoons Dijon mustard
  • 6 tablespoons raspberry red wine vinegar
  • 2 tablespoons chopped parsley
  • 2 tablespoons black poppy seeds
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup shredded carrots
  • 1/4 cup sliced black olives

Preparation

Step 1


BOIL pasta until tender but firm in a large pot of salted water. Rinse under cool water, drain well and transfer to a large mixing bowl.

COMBINE sour cream, honey, mustard, vinegar, parsley, poppy seeds and lime juice in a separate bowl.

POUR about three-fourths of the dressing over pasta and toss to combine. Add more dressing as needed to dress pasta to taste. Fold in carrots and olives.
