Ingredients

  • 2 (8oz) pkgs cream cheese,softened
  • 2 eggs,well beaten
  • 3/4 Cup sugar
  • 1 Tsp vanilla
  • Lemon juice to taste
  • 24 vanilla wafers
  • Canned pie filling (optional) eg:cherry,apple or peach
  • Almond extract,to taste (added to pie filling)

Preparation

Step 1

1)Place foil or paper liners in a muffin tin (24)
2)Place a vanilla wafer in bottom of each liner.
3)Blend cream cheese,eggs,sugar,vanilla and lemon juice.
4)Fill liners with cream cheese mixture 2/3 full,bake at 350 degrees for 10 minutes.
5)Let cool and,if desired,spread pie filling over cheesecake.
