Pesche (Italian Peach Cookies)

Ingredients
- For Cookies:
- o 1 cup of sugar
- o 1 cup of vegetable oil
- o 1 tablespoon of baking powder
- o 4 large eggs
- o 4 cups of flour
- For Filling:
- o 1 small jar of peach or apricot preserves
- o 1 tablespoon or more to taste of peach brandy or apricot brandy
- o 25 shelled almonds with skin on.
- Frosting:
- o 1 cup sugar - add as needed
- o 1 cup of grenadine - add as needed
- o 1 cup of peach or apricot
- o brandy leaves and cloves for garnish or spearmint (optional)

Preparation
Step 1
1. Preheat oven to 350 degrees
2. Lightly grease cookie sheets or use parchment paper
3. Mix together sugar, eggs and oil.
4. Add flour and baking powder.
5. Form 1" balls (cookies should be "flat" on the bottom where they rest on the cookie sheet) and bake about 10-15 minutes (until lightly browned on the bottom).
6. While cookies are baking, prepare filling by combining the preserves and brandy.
7. While cookies are baking, prepare icing by placing cup of sugar in a small deep bowl, the grenadine in a small deep bowl, and the brandy in a small deep bowl.
8. When cookies come out of the oven, let cool for a few minutes.
9. Take the cookies and use a knife to scoop out some cookie to form an indentation for the filling.
10. Place some filling in the indentation and place the almond in the middle (the pit of the peach)
11. Take another cookie and just put in the filling (no pit) this will be the other half. Put the two cookies together to look like a peach.
12. Dip the peach to get it complete wet on the outside in the brandy, dip again in the grenadine for the red coloring.
13. Roll peach in sugar and place in muffin cups. Before serving, garnish with leaves and or a clove in the middle.
