Can we just talk about these banana splits on a stick? My little guy and I are so excited about them. It’s a fun summer hack on the traditional banana split treat.

Ingredients

  • 6 bananas
  • 2 6oz. Yoplait Original Cherry Yogurt (or your preferred flavor)
  • 7 oz. chocolate, melted
  • 2 tablespoons creamy peanut butter, melted
  • 5 tablespoons sprinkles
  • 1 cup whipped cream (recipe follows)
  • 12 maraschino cherries
  • Whipped Cream
  • Makes 1 cup
  • 1/2 cup cold whipping cream
  • 1 tablespoon sugar

Step 1

Preparation: Line a baking sheet with parchment paper. Fill pastry bag with yogurt.

Slice the bananas at an angle. Insert popsicle sticks. Using an apple corer or a knife, core out center of each banana just above the popsicle stick. Fill center with yogurt and transfer to parchment line baking sheet. Transfer baking sheet to freezer to set, about 4 hours. Freeze time will vary according to freezer setting and how full it is.

Fill a small plastic bag with melted peanut butter, make a small cut in one corner. Set aside. Remove popsicles from freezer, dip frozen banana popsicle in chocolate and place back on parchment lined baking sheet. Drizzle peanut butter on top and layer with sprinkles, whipped cream and maraschino cherry. Serve immediately.

Whipped Cream

Place all ingredients in a chilled mixing bowl, using a hand mixer (or whisk), beat cream until soft peaks hold, about 2-3 minutes using a hand mixer (5 minutes with a whisk).

Yield: 12 Popsicles
