Ingredients

  • 1 (32 oz.) “frozen” mixed vegetables (generic is fine)
  • 1 c. chopped celery * optional ---
  • or just use celery salt to taste
  • 3/4 c. finely chopped onion (red onion is best)
  • 1 c. mayonnaise
  • 1 c. shredded Cheddar cheese
  • 1 1
  • 1/2 tubes of Ritz crackers (crushed)
  • 1 c. melted butter
  • Salt and Pepper to taste

Preparation

Step 1

1. Microwave the vegetables until slightly tender and drain.
(about 5 min.)
2. Add celery (or ½ tsp. of celery salt), onion, mayonnaise and
cheese, salt and pepper to taste, stir together.
3. Pour into a large buttered casserole. ( or use PAM Spray)
4. Top with Ritz cracker crumbs.
5. Pour the melted butter all over the top of Ritz crumbs and spread
evenly with the back side of a large serving spoon.

Bake in 350 degree oven for 22 - 25 minutes or until bubbly (large covered casserole). Serves 12 - 14
