Ingredients

  • 1 1/2 cups water
  • 2 1/2 cups frozen berries
  • 2 Tbsp lemon juice, or 2-3 drops essential lemon oil
  • 3-4 doonks pure stevia extract, or 2 1/2 to 3 1/2 tsp Super Sweet, or 5-7 tsp Gentle Sweet
  • 3/4 to 1 1/2 tsp Gluccie

Preparation

Step 1

1. Put the water, 1 cup berries, and all other ingredients EXCEPT Gluccie in a blender and blend well.
2. Transfer the puree to a medium saucepan and add the rest of the berries. Bring the mixture to a boil, then turn down the heat to a simmer. Depending on whether you want a thicker or thinner jelly, start whisking in the Gluccie; use only 3/4 tsp for a syrup-like consistency. Use the full amount for a set jelly. This jelly will thicken more as it sits in the fridge.
3. Taste and adjust the sweetness to "own it." Keep refrigerated until ready to use.
