Ingredients

  • 3 lbs stew meat, cut into 1 inch cubes
  • 1 16oz pkg fresh baby carrots
  • 1 large onion, diced
  • 1 15oz can tomatoes
  • 1 15oz can peas, drained
  • 1 15oz can green beans, drained
  • 1 15oz can small whole potatoes, drained (I quarter potatoes)
  • 1 10 1/4oz can beef consommé (only use 1/2 can)
  • 1/4 cup quick cooking tapioca
  • 1 Tbsp brown sugar
  • 1/2 cup fine dry breadcrumbs
  • 2 bay leaves
  • 1/2 cup dry white wine
  • salt and pepper

Step 1

preheat oven to 250 degrees. Combine all ingredients in a dutch oven. Cover and cook in oven for 6-7 hours.

*I usually add most of the remaining beef consommé for more moisture.
