Ingredients

  • 8 medium potatoes, peeled
  • boiling salted water
  • 2 tbsp cooking oil
  • 2 tbsp margarine

Preparation

Step 1

Cook potatoes in boiling salted water for 10 minutes. Drain. Blot dry.
Meanwhile heat cooking oil in 9x13 inch pan or small roaster. Place potatoes in pan turning each to coat with cooking oil and margarine. Cook covered for about 1 hour until tender. If there is room in roaster when cooking roast, potatoes may be cooked alongside.
