Ingredients

  • Roasting:
  • 4 red bell peppers
  • 4 cloves garlic
  • Sauce:
  • 1/2 small red onion, chopped
  • 1/4 cup red wine vinegar
  • 1 Tbsp honey
  • 1 Tbsp dijon mustard
  • 1 Tbsp chipotle in adobo sauce
  • salt and pepper
  • 1/2 cup canola oil

Preparation

Step 1

1) Preheat oven to 375
2) Apply olive oil, salt and pepper to bell peppers
3) Rub loose garlic cloves with olive oil, salt and pepper and wrap in tin foil
4) Put both in oven and roast for 20 minutes then lower to 300 degrees and remove the peppers into bowl and cover with plastic wrap for 15 minutes. Roast garlic at lower temperature for another 25 to 30 minutes
5) Peel, seed and chop the red peppers
6) Peel the skin off of the roasted garlic
7) Combine everything but the oil and blend into a puree
8) slowly add the oil and blend until emulsified
9) can be stored in fridge for 1 day
