Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1/2 diced green pepper
  • 1/2 diced red bell pepper
  • 1/2 diced onion
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons southwest essence emerils
  • 2 cans (8-3/4 ounces) whole kernel corn, drained
  • 1 can black beans, drained
  • 1 cup condensed cream of chicken soup, undiluted (1 can)
  • 1 cup shredded cheddar cheese, divided
  • 2/3 cup 2% milk
  • 1/4 cup sour cream
  • 1 bag frozen tater tots

Preparation

Step 1

Place first 7 ingredients in a large skillet,cook over medium heat until no longer pink.
Stir in the corn, black beans, soup, 1/2 cup cheese, milk, sour cream.
Heat through out.
Place 1/2 bag Tater Tots in a greased 3-4 quart baking dish.
Layer with beef mixture and remaining Tater Tots; sprinkle with remaining cheese.
Bake, uncovered, at 375° for 25-30 minutes or until bubbly.

Yield: 6 servings.
