Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup ketchup
  • 1/2 cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 2 green onions, chopped
  • 1 clove garlic
  • 2 teaspoons lemon juice
  • 1 teaspoon hot pepper sauce
  • 4 skinless boneless chicken breast
  • 1/4 teaspoon salt and pepper

Step 1

Combine peanut butter, ketchup and orange juice in blender or food processor. Add soy sauce, mustard and honey, green onions, garlic and lemon juice. Blend until smooth, adding hot pepper sauce to taste. Transfer to a saucepan and bring to a boil. Reduce heat to low and simmer for 10 minutes. Cool to room temperature. (can store in fridge for 5 days). Divide in half.

Preheat indoor grill to medium-high or broiler to high. Slice chicken breasts lengthwise into long thin strips. Thread onto wooden skewers and brush evenly with half the sauce. Season evenly with salt and pepper. Lightly grease grill and place satays on grill. Cook, turning as necessary for 7 to 10 minutes or until cooked through. Serve with reserved sauce on the side for dipping.
