Ingredients
- 5-6 medium-sized carrots, finely chopped or grated (not puréed)
- 2 eggs
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/8 teaspoon cumin (optional)
- 1/4 cup King Arthur Unbleached All-Purpose Flour
- 4 tablespoons (1/2 stick) butter

Preparation
Step 1
Mix carrots, eggs, salt, sugar, cumin (if desired), and flour in a medium-size mixing bowl. Set aside.
Melt enough of the butter in a medium-size skillet to just cover the bottom of the pan. Drop the batter by tablespoons into the hot butter. Fry fritters for a couple of minutes on each side, or until they're set and golden brown. Cool on absorbent paper.
