Chicken-Chipotles Style

Ingredients
- 3 pounds boneless skinless chicken thigh
- salt and pepper
- 1 can chipotle en adobo finely chopped
- 1/2 cup Cilantro lime vinaigrette

Step 1
In bowl put chicken add salt and pepper, cumin and chopped peppers then put in a zip locked bag over night are for a least two hours.
Heat oil in large skillet over medium-high heat. Sear chicken on both sides until golden brown and cooked through 10 to 12 minutes per side.
Using tongs or spatula remove chicken and let cool a few minutes. Chop into bites and return to skillet over medium-high. Cook stirring pretty frequently, until all the bites are kind of browed and coated in all the chipotle amazingness about 4 minutes.
