Ingredients

  • 5 lbs. pork loin back ribs
  • salt
  • ground black pepper
  • 1 cup finely chopped onion
  • 1 cup finely chopped green pepper
  • 3 tablespoons vegetable oil
  • 1 bottle (28 oz.) ketchup
  • 1-1/2 cups firmly packed brown sugar
  • 3/4 cup orange marmalade
  • 3/4 cup apple cider vinegar
  • 1 tablespoons hot pepper sauce
  • 1 teaspoon salt
  • 3/4 teaspoon ground black pepper

Step 1

Preheat oven to 350 degrees. Place rib racks in a single layer in foil-lined baking pans. Sprinkle ribs with salt and pepper. Cover with foil and bake 1 hour or until fully cooked. Let cool. While ribs are cooking, saute onion and green pepper in oil in a large saucepan over medium heat until tender. Stir in ketchup, brown sugar, marmalade, vinegar, pepper sauce, 1 teaspoon salt and 3/4 teaspoon black pepper. Stirring constantly, bring sauce to a simmer. Reduce heat to medium low. Stirring frequently, cook sauce 30 minutes (mixture will be thick). Remove from heat and let cool. Cut racks into individual ribs. Transfer to a heavy duty resealable plastic bag. Pour 2 cups sauce over ribs, refrigerate overnight to let ribs marinate. Store remaining sauce in an airtight container in refrigerator. To serve, preheat oven to 425 degrees. Place ribs in foil-lined baking pan. Spoon sauce from plastic bag over ribs. Bake uncovered 1 hour or until sauce cooks onto ribs, turning every 15 minutes and basting with remaining sauce. Serve warm.
