  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • pinch of ground cloves
  • 1 cup (2 sticks) unsalted butter room temperature
  • 1-1/3 cups sugar
  • 1/3 cup packed dark brown sugar
  • 5 large eggs
  • 1-1/2 teaspoons vanilla extract
  • 1 cups chopped pecans toasted

Step 1

Preheat oven to 350 degrees. Butter and flour 9x5x3 inch load pan. Whisk first 7 ingredients in medium bowl to blend. Using electric mixer, beat butter and both sugars in large bowl to blend. Add eggs one at a time, beating well after each addition. Beat in vanilla. Gradually add flour mixture, beating well., Fold in pecans. Transfer batter to prepared pan.

Bake cake until golden and test inserted into center comes out clean about 65 minutes. Cool cake in pan on rack 15 minutes. Turn cake out onto rack and cool completely.
