Ingredients

  • 20 vanilla wafers, finely crushed
  • 1-1/2 teaspoons seasoned salt
  • 3/4 teaspoon ground red pepper
  • 1/2 teaspoon pepper
  • 1-1/3 cups all purpose flour, divided
  • 1/4 cup milk
  • 1 large egg, 6 skinned and boned chicken breasts cut into 1-1/2 inch pieces
  • 1 cup canola or vegetable oil
  • ranch dressing

Step 1


Stir together first 4 ingredients and 1 cup flour. Stir together milk and egg. Dredge chicken pieces in remaining 1/3 cup flour, dip in egg mixture, and dredge in wafer mixture. Heat oil to 375 deg. Fry chicken for 2-3 minutes. Drain chicken on paper towels and serve with Ranch dressing.
