Ingredients
- 1/2 cup olive oil
- 6-8 garlic cloves, cut into paper-thin slices or finely chopped
- 2/3 cup fresh lime or sour orange juice 1/2 cup water
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons chopped fresh cilantro or flat-leaf parsley

Step 1
Heat olive oil in a deep saucepan over medium heat. Add garlic and cook until fragrant and a pale golden brown. Do not let mixture brown too much, or the garlic will become bitter. Stir in the lime juice, 1/2 cup water, cumin, oregano, salt and pepper. Bring the sauce to a rolling boil. Correct the seasoning by adding salt and pepper to taste. Let cool to room temperature, then stir in the cilantro. Store Mojo in a glass bottle in refrigerator. Mojo will keep for several weeks. Shake well before using. Makes 1-1/2 cups. Use as marinade for pork, chicken, etc.
