Ingredients
- 12-14 pound turkey
- lemon juice
- 1 bottle (24 ounces) Catalina mojo sauce 1 large onion quartered
- 1 large carrot cut into three pieces
- 1 stalk celery cut in half
- 2 granny smith apples halved
- 2 cups orange juice no pulp
- vegetable oil

Step 1
Rinse turkey thoroughly, inside and out, with cold water and fresh lemon juice, pat dry. Pour mojo over turkey and coat cavity with it. Place onion, carrot, celery and apples in cavity and tie legs to tail with twine., Lift wing tips up and over the back,. Pour orange juice over Turkey, then place bird in a plastic bag, seal. Refrigerate overnight. The next day remove bird and place in roasting pan, breast side up. Brush turkey with oil and bake at 325 until thermometer in dark meat reads 180 degrees, about 4 hours.
