Ingredients

  • Ginger soy dressing:
  • 3 cups shredded cooked chicken
  • 4 green onions chopped
  • 1 red bell pepper cut into julienne strips
  • 3 cups mixed torn lettuce leaves
  • 1 cup snow peas, trimmed and microwaved on high for 1 minute
  • 12 flour tortillas (6 inch) warmed
  • ginger soy dressing
  • chopped fresh cilantro
  • 1/4 cup soy sauce
  • 1/2 cup rice wine vinegar
  • 3/4 cup vegetable oil
  • 1/3 cup sugar
  • 2 tablespoons sesame oil
  • 1/4 cup sesame seeds
  • 1 tablespoon grated ginger root
  • In a glass bowl, whisk ingredients until emulsified. Refrigerate up to 2 weeks. Remove dressing from refrigerator, shake well.

Step 1

Combine all ingredients except tortillas, ginger dressing and cilantro in a large bowl. Warm tortillas in the microwave. When ready to serve, toss salad with ginger dressing. Place 1/2 cup salad into each tortilla. Garnish with chopped cilantro.
