Ingredients

  • PEANUT SAUCE:
  • 1/4 cup soy sauce
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon cooking oil
  • 4 skinless boneless chicken breast halves, cut in cubes
  • 34 wooden skewers, soaked
  • 2 red peppers, cut into 1" squares
  • 6 green onions, cut into 1" pieces
  • 2 yellow peppers, cut into 1-inch squares
  • 1/3 cup smooth peanut butter
  • 3/4 cup water
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cooking oil
  • 1/2 teaspoon crushed red chili peppers
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Preparation

Step 1

Stir first 7 ingredients together well in plastic bag.

Add chicken. Squeeze air from bag and seal. Let marinate overnight, or at least several hours, in refrigerator. Turn bag occasionally.

Thread wooden skewers with red pepper, chicken, onion, chicken, yellow pepper. Broil about 2 inches from heat for about 7 minutes, turning once or twice. Chicken will be golden brown.

PEANUT SAUCE: Measure all ingredients into saucepan. Heat and stir until boils. Simmer for 5 minutes until it thickens. Serve as a dip for the satay. Makes about 1 cup.
