Ingredients
- 4 boneless skinless chicken breast halves
- 1/4 can all-purpose flour
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh lemon thyme or other herb
- 2 teaspoons dry sherry
- 1/2 cup whipping cream

Step 1
Toss chicken breasts in flour, shaking off any excess.
Heat the oil in a large non-stick skillet. Cook the chicken for 5 minutes on each side, or until golden brown.
Sprinkle with lemon thyme, then turn the chicken over. Add sherry, pour in half the cream and boil for 2 - 3 minutes. Turn the breasts over again and drizzle with the remaining cream. Season to taste.
