Ingredients

  • 12 eggs
  • cold water
  • 5 slices of thick bacon, chopped
  • 1/2 cup mayo
  • 1 tbls grainy dijon mustard
  • 1/4 teas fresh ground pepper
  • 1 ripe firm avocado
  • 2 teas lemon juice

Preparation

Step 1

Place eggs in a large saucepan then add enough water to just cover the eggs. Boil and then remove from heat for 15 minutes; drain. Run cold water over eggs, peel and slice lengthwise. Remove yolks and place in medium bowl. Set aside.

Fry bacon, drain on paper towels set aside. Mash egg yolks with fork , add mayo, mustard, pepper, stir to mix.

Chop avocado into 1/2 inch pieces; toss with lemon juice. Place pieces of avocado in hollow of each egg. Spoon egg yolk into eggs halves. Sprinkle with bacon pieces. Cover and chill for 4 hours before serving.
