Ingredients
- 1 package spaghetti, 12 ounces
- 1/2 cup olive oil
- 2 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 2 each shallots, finely chopped
- 4 cups vegetables, try zucchini,red and orange peppers, cubed
- 6 tablespoons butter
- 1 1/2 cups heavy cream
- 1 cup parmesan cheese, shredded
- sea salt
- freshly ground black pepper
- 1/2 teaspoon nutmeg

Step 1
Prepare pasta following instuctions on package.
Heat oil and sauté garlic, onion and shallots first, then assorted vegetables, until hot but still crisp
In a saucepan, heat butter and 1/2 cup cream to just bubbling, constantly stirring.
Reduce heat and add remaining cream and cheese a little at a time until reaching a smooth texture. Add salt, pepper and nutmeg.
Drain and toss spaghetti with vegetables and parmesan sauce. Serve immediately.
