This is a slightly modifed version of the classic southern tea cakes that your favorite aunt would just sort of whip up on Sunday afternoons. Watoto is Swahili for "children". I call these Watoto Tea Cakes because, back in the 90's I used to make them for the meetings of our investment club of the same name.

Ingredients

  • 1 1/3 cups Crisco all vegetable
  • shortening (butter flavored
  • works well)
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 teaspoon salt
  • 4 teaspoons of baking powder
  • 1 teaspoon nutmeg
  • 3 teaspoons good vanilla extract
  • 1 teaspoon almond extract
  • 5 cups flour
  • 6 tablespoons milk

Preparation

Step 1

1. Cream sugar and shortening in large
bowl. Add eggs, salt,baking powder,
nutmeg, vanilla and almond extracts.

2. Mix at medium speed with electric
mixer, gradually adding flour.
Chill about 30 minutes.

3. Grease baking sheet or line with
parchment paper or silpat. Measure
dough with medium sized ice cream
scoop . Place on baking sheet.
Press down with bottom of glass.

4. Bake in a 350 degree oven 15-20
minutes until barely golden.
