Step 1

Choose at least three or four fruits: peaches, skinned and sliced (if the skins resist, drop the peaches into boiling water and drain immediately); pears, peeled, cored and diced; strawberries; raspberries; grapes, skinned and seeded; cherries; citrus fruits and pineapple do not mingle well with wine; peeled and sliced kiwi fruit is pretty but not especially flavorful. Instead of including whole raspberries, a few may be pureed and poured over the other fruits before the wine is added.

Mix the fruits together in a large glass bowl, sprinkle with sugar to taste and leave for a few minutes until the sugar has incited and penetrated the fruits. Pour over wine to cover.

This is best prepared 1 to 2 hours in advance and refrigerated with a tight cover of plastic wrap.
