Strawberries in wine are a common and much-loved dessert in all wine-making countries; usually the strawberries are simply presented at table and each guest fills his wine glass with berries, pours some more wine over, sugars to taste, and lightly cuts up and mashes the berries so that their juice mingles with the wine.

  • sugar, to taste
  • wine to cover (the same that has been drunk throughout the meal)

Step 1

Pick over the strawberries, rinse them rapidly, drain them, and sprinkle them with sugar. Leave them to macerate for an hour or so and, shortly before serving, pour enough wine over just to cover them.
