Healthy Banana Split Bread

A deliciously, healthy banana bread filled with fresh strawberries, chocolate chips and walnuts is quick and easy to whip up. Makes a great gift too.

Ingredients
- 3 ripe bananas
- 2 eggs
- 1/4 cup sugar
- 1 tsp. kosher salt
- 1 tsp. baking soda
- 1 tsp. pure vanilla extract
- 2 cups (240 grams) whole wheat pastry flour
- 1 cup diced strawberries
- 1/2 cup mini chocolate chips
- 1/2 cup chopped walnuts

Step 1
Preheat oven to 350•. Spray a loaf pan with non-stick baking spray.
Puree first 6 ingredients in a blender.
Pour into a large bowl and mix in remaining ingredients.
Pour into loaf pan.
Bake for 1 hour, or until cooked through.
Cool on a wire rack for 5 minutes.
Take out of pan and cool bread on wire rack.
Yields 16 slices
