This is essentially an herbed homemade mayonnaise and is very good as a dip for vegetables. If you don't do raw egges just blend he main ingredients without the yolks or vinegar, then fold into a cup of mayonnaise.

Ingredients

  • 3 egg yolks
  • 3 tablespoons red or whit vinegar
  • 2/3 cups chopped parsley
  • 1 can (2 ounce) anchovies and their oil
  • 6 green onions
  • 1 1/2 teaspoons dried tarragon (or better), a tablespoon of fresh tarragon
  • 1 1/4 cup vegetable oil

Step 1

In a blender or food processor, blend the yolks, vinegar, parsley, anchovies, green onions and tarragon to a liquid. Keeping the blender going, slowly and steadily add the oil. It should emulsify and turn into a green-thick mayonnaise. It may not need salt, because of the anchovies. refrigerate
