Lemon Shortbread Sandwiches

Ingredients

• Cookies:
• 2 C butter, room temperature
• 1 C powdered sugar
• 1 Tbl lemon zest
• 1/2 tsp salt
• 2 C flour
• Filling:
• 4 oz cream cheese
• 1 Tbl lemon zest
• 1 C powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees.

Cookies:
Cream together all but flour, add flour and mix to combine.

Place on plastic wrap and refrigerate 1 hour. Roll out dough on powdered sugar and cut into 2 inch rounds, place on cookie sheet.

Bake for 20 minutes. Cool, then frost.

Filling:
Cream chees, zest and sugar together. Place 1 tsp frosting on back of one cookie and place another on top of frosting.
