Passion Fruit and Coffee Slurps

Ingredients
- For the basic syrup:
- 2 oz sugar
- 1/4 cup water
- For the passion fruit gelatin:
- 3/4 cup passion fruit juice
- 1/3 cup basic syrup (see previous step)
- pinch powdered agar-agar
- 0.6 sheets gelatin (previously rehydrated in cold water)
- For the coffee gelatin:
- 1/2 cup expreso coffee
- 1/2 oz sugar
- pinch powdered agar-agar
- 1/2 sheet gelatin (previously rehydrated in cold water)
- To finish:
- 10 slurps

Preparation
Step 1
For the basic syrup:
1. Mix the two ingredients together and bring to the boil.
For the passion fruit gelatin:
1. Stirring constantly, bring the basic syrup and agar-agar to the boil.
2. Once it has boiled, remove from the heat, dissolve the gelatin in it and add the passion fruit juice.
For the coffee gelatin:
1. Stirring constantly, bring ¼ cup of coffee, the sugar and the agar-agar to the boil.
2. Once it has boiled, remove from the heat, dissolve the gelatin in it and add the rest of the coffee.
Final Steps & Preparation:
1. Prepare the slurps by placing them vertically on a specially prepared tray.
2. Fill 3/4 full with passion fruit gelatin and leave to set in the fridge.
3. Top the slurps with the coffee gelatin and return to the fridge so the coffee gelatin sets.
4. Serve in a kebab holder.
