Chicken Waldorf Salad Sandwiches

Ingredients
- 1 apple chopped
- 2 T lemon juice
- 1 container plain yogurt
- 1/2 c mayonnaise
- 1/4 c orange juice
- 1/4 tsp salt
- 2 1/4 c cooked chicken
- 1 c chopped pineapple
- 1/2 c halved seedless grapes
- 1/4 c chopped celery
- 1/2 c chopped walnuts
- 5 croissants split
- Lettuce
- black pepper to taste

Preparation
Step 1
In small bowl combine apple and lemon juice. In medium bowl, combine yogurt, mayonnaise, orange juice and salt. Stir in chicken, grapes, pineapple and celery.
Drain apples and add to chicken mixture. (discard juice) Cover and chill at least 1 hour. Just before serving add walnuts.
Line bottom half of croissant with lettuce and top with chicken mixture. Season to taste with pepper. Add top slice and enjoy.
