Ingredients
- 8 ounce package country ham trimmings
- 4 cups chicken broth
- 1 stick butter or margarine
- 1 medium onion, chopped
- 3 stalks celery, diced
- 1 tablespoon minced garlic
- 4 cans navy beans
- 1 cup instant potato flakes
- Salt
- Pepper

Preparation
Step 1
Chop ham into bite-size chunks. Place in a medium pot; add broth. Bring to a boil and allow to simmer.
Meanwhile, in a large pot or dutch oven, add butter, onion, celery and garlic. Cook on medium heat until vegetables are tender. Add beans, don't drain can. Add broth and ham. Stir well and allow to come to simmer. Stir in potato flakes and mix well. Simmer for about 20 more minutes. Add salt and pepper as desired.
This will thicken while standing. Excellent with cornbread.
