Ingredients

  • 1/2 medium clove garlic
  • 1 pinch fine grain sea salt
  • 1/2 cup thick Greek yogurt
  • 1 tablespoon chopped fresh dill
  • 3 fresh mint leaves, chopped
  • one baby cucumber, seeded & finely diced
  • 1/2 tablespoon best olive oil
  • 1 tablespoon deeply toasted walnuts (7 grams)
  • 1/2 teaspoon crushed dried rose petals, optional
  • 1 tablespoon chopped dried cranberries or cherries (7 grams)

Preparation

Step 1

Sprinkle garlic with salt and mash/chop into a paste with a knife. Stir the paste into the yogurt along with the dill and mint. Cover and refrigerate until ready to serve.

When ready to serve, add cucumber to the yogurt and salt once more to taste. Spoon into a serving dish and serve drizzled generously with the best olive oil you have, sprinkled with the walnuts, dried rose petals, and dried cranberries or cherries.

Serve with toasted pita bread wedges.
