Ingredients
- For the guacamole:
- INGREDIENTS
- 3 avocados
- 1 red onion, diced
- Handful of fresh coriander, roughly chopped
- 1 tomato, diced
- Juice of 1 lime
- 1 green or red chilli, chopped and deseeded
- Salt and pepper to taste
- For the chicken:
- 2 chicken breasts
- 4 bacon rashers

Step 1
Preheat oven to 200°C/400°F/Gas Mark 6.
2.In a big bowl, combine all of the guacamole ingredients and stir together with a fork or whisk.
3. Butterfly chicken breast by cutting it in half lengthways, about 90% across, and folding it open.
4. Flatten chicken with a rolling pin. Spoon 1 tablespoon of guacamole onto one side of the chicken and fold it over.
5. Wrap the chicken in 2 slices of bacon, then bake for 15-20 minutes, or until chicken is cooked through.
