Ingredients
- 4- 60 oz skinless, boneless chicken breast
- 1/2 teaspoon salt
- 2 tablespoons extra spicy salt free seasoning (use Fajita seasoning as well)
- 1/3 cup cornmeal
- 1/2 cup non fat buttermilk
- 1 cup precrushed cornflake crumbs
- Olive oil flavored cooking spray

Step 1
1. Preheat oven to 400
2. Place chicken breats halves between 2 pieces of heavy duty plastic wrap. pound to an even thickenss (don't get too thin). Sprinkle chicken evenly with salt and 2 teaspoons of seasoning
3. Combine cornmeal and 1 tablespoon seasoning in a shallow dish. Combine buttermilk and 1 teaspoon seasoning in a separate dish. Dreddge chicken inc ornmeal mixture, dip in butermilk mixtured, and dredge in cornflake crumbs, pressing firmly. Place chick on a wire rack coated with sooking spray. place rank on a jelly roll pan. Lightly coact chicken with cooking spray.
4. Bake at 400 for 25 minutes or until done.
