Ingredients
- 3 cups cooked rice
- 2 cups (1 lb. can) tomatoes, drained
- 1 3 oz. can sliced mushrooms, drained
- 2 tbsp. chopped green pepper
- 2 tbsp. chopped onion
- Salt and pepper
- 1/2 lb. pasteurized process cheese spread, sliced
- 2 hard-cooked eggs, cut in wedges
- parsley

Preparation
Step 1
Combine rice, tomatoes, mushrooms, green pepper, onion and seasonings. Alternate layers of rice mixture and cheese in 1 1/2 quart casserole dish. Bake at 350 degrees for 30 minutes. Garnish with egg wedges and parsley. Serves 6-8
