  • cooking spray
  • 6 T brown sugar
  • 6 drained canned unsweetened pineapple slices
  • 1 3/4 c flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 c buttermilk
  • 3/4 c maple syrup
  • 1/4 c vegetable oil
  • 2 T vanilla extract
  • 1 T lemon juice

Step 1

Coat each cup of mini bundt pan with spray. Place 1 tablespoon and 1 pineapple ring in bottom of each cup.

Combine flour thru salt in a bowl. Make a well in center of mixture. Combine buttermilk thru lemon juice; stir well. Add to flour mixture, stir until moistened.

Divide batter evenly among prepared mini bundt cups. Bake at 350 F for 30 minutes or until wooden pick inserted in center of cake comes out clean. Serve warm or at room temperatur.
