Ingredients
- 2 1/2 cups water
- 1 1/4 cups bulgur
- 1/4 cup lemon juice
- 3 tablespoons basil pesto
- 2 cups fresh or frozen edamame, thawed
- 2 cups cherry tomatoes cut up
- 1/3 cup thinly sliced green onions
- 2 tablespoons snipped fresh parsley
- 1/4 teaspoon black pepper
- 1/3 cup crumbled feta cheese

Preparation
Step 1
First, in a medium saucepan, bring the water to a boil; stir in bulgur.
Return to boiling; reduce heat. Simmer, covered about 15 minutes or until water is absorbed. Transfer to large bowl.
Next, in a separate bowl, whisk together lemon juice and pesto; drizzle over cooked bulgur. Let mixture cool to room temperature. Gently stir in next 5 ingredients. Sprinkle with feta and enjoy!
