Ingredients
- 21/4 cup butter, softened
- 1 cup plain flour
- 83/4 oz Reggiano parmesan, grated
- 1 egg

Preparation
Step 1
For the parmesan crackers:
1. Beat the butter in a kneading machine using a mixing spatula.
2. Gradually add the cheese and egg to the flour until you have a smooth dough.
3. Wrap the dough in cling film and leave to rest in the fridge for at least 6 hours.
4. Roll the dough out between 2 sheets of greaseproof paper until it is 1/10" thick and freeze.
5. Use a 1¼" diameter pastry cutter to cut the dough into circles.
6. Bake on greaseproof paper at 325 ºF for 7 or 8 min.
Final Steps & Preparation:
1. Place the crackers on top of each other to make a tower and serve.
2. Decorate with a little lemon rind.
Note: Roll out the leftover pastry to make more crackers.
