- 5 cuttlefish roe
- 1 cup olive oil

Step 1
For the puffed cuttlefish roe:
1. Wrap the roe in clingfilm and freeze.
2. Prepare a tray by tightly lining it with cling film.
3. Use a meat slicer to cut the frozen roe lengthwise through the widest part and place directly on the tray that you have lined with cling film.
4. Fry the roe in small batches in piping hot oil until they expand puff up. Drain using a slotted spoon.
5. Spread the roe over kitchen paper. Season salt while still hot so that the salt sticks to the roe.
Final Steps & Preparation:
1. Pile up the roe in a suitable dish.
