Ingredients

  • Mashed Potatoes:
  • 1 lb. lean ground beef
  • 8 oz. Italian sausage, sliced 1/4" thick
  • 1 16-oz. can whole peeled tomatoes
  • 1-1/2 c. sliced mushrooms
  • 1 clove garlic, mince
  • 2 Tb. Balsamic vinegar
  • 1 Tb. chopped basil
  • 1 tsp. salt
  • 1/4 tsp. oregano
  • 1 c. frozen peas (Beth must have put them on Heather's plate)
  • 2 lbs. potatoes
  • 3/4 c. milk
  • 1/2 c. grated Parmesan cheese
  • 6 Tb. butter

Preparation

Step 1

Cook beef and sausages in large skillet, over med-high heat until meat loses some of it's pimk. Add tomatoes, mushrooms, garlic & vinegar. Simmer, uncovered, stirring occasionally and breaking up tomatoes. Stir in peas, basil, salt, pepper & oregano. Simmer 10 min. and remove from heat.

Make the mashed potatoes (they'll be "looser" than usual)

Heat oven to 350. Spoon meat mixture into shallow, sprayed casserole pan. Spoon potatoes on top and spread evenly to edge of pan. Bake until golden and bubbling, about 40-60 min. Let stand 10 min. before serving
