Frozen Caipirinha Pastille

Ingredients
- For the tarragon juice:
- 3 oz tarragon leaves
- 2 cups water
- 1 cup water
- For the basic syrup:
- 2 oz sugar
- 1/4 cup water
- For the frozen caipirinha pastille:
- 1/3 cup tarragon juice (see previous step)
- 7 tbsp white rum
- 7 tbsp basic syrup (see previous step)
- 7 tbsp water
- 1/3 cup lemon juice
- To finish:
- 1 2 x 1 x 1/2 " ice-cube tray
- 10 23/4 x 3" sheets cellophane

Preparation
Step 1
For the tarragon juice:
1. Bring 2 cups of water to the boil.
2. Blanch the tarragon leaf for 10 seconds.
3. Drain and plunge in 1 cup of iced water.
4. Drain and blend in a food processor with 1/3 cup of the water used to freshen the tarragon.
5. Strain and keep on one side.
For the basic syrup:
1. Mix the water and the sugar together and bring to the boil over a medium heat.
2. Stir. Remove from the heat and cool in the fridge.
For the frozen caipirinha pastille:
1. Mix all the ingredients together while they are cold.
2. Fill the ice-cube trays
3. Freeze at -70ºF.
Final Steps & Preparation:
1. Turn out the caipirinha pastilles and wrap them in the cellophane.
2. Serve on a frozen surface.
